The city that Introduced me to Asia
Before moving to Hong Kong, Asia was completely unfamiliar to me. Living in Kowloon for nine months immersed me in a city where food wasn’t just something you ate it was woven into everyday life. Morning bakeries, dim sum, late-night noodles, bustling wet markets, cha chaan tengs, and family-style Cantonese meals became part of my routine.
The title pays homage to Kowloon, whose name is forever linked with the legendary Walled City, a place that has become one of the most fascinating symbols of Hong Kong’s history. While this dinner isn’t about recreating the Walled City itself, it represents the vibrant, layered, and resilient spirit of Kowloon and the city I was fortunate enough to call home.
Each course reflects flavors and memories that left a lasting impression on me, blending traditional Cantonese influences with my own cooking style. This is both a love letter to Hong Kong and a celebration of the place that introduced me to Asia.
